Air dried beef from Dorset 80g

This wonderful beef is quite similar to a classic bresola, its made with best west country beef and is cured with juniper, thyme, rosemary and black pepper before it is left for a few weeks to air dry in a designated maturing rooms.

Great with so many dishes and fantastic when slightly rehydrated with oil.
